Made with plump raisins and a touch of cinnamon. Just add applesauce, melted coconut oil (or melted butter), cider vinegar and one apple, peeled and diced (optional). The diced apple makes a great add-in, giving a nice texture and flavor to these delicious muffins. Or make a cake using an 8×8″ square baking pan. Serve warm or let cool and dust with powdered sugar.
